Updating EV's:
There are two ways to update EV's:
The first method is leveling up, each time a Pokemon levels up, the EV's are added on and you will see the stats increase, but this can be a little inconvenient at times.
Here is a picture of a Gible leveling up, you can see that the fruits of our labor paid off with the large stat increase.
The second method is simple, just deposit a Pokemon into the PC and its stats are upgraded, this can be more convenient in certain situations; for example, let's say you have an Azelf at level 50, you've gotten the maximum EV's you can yet you haven't leveled up, this way, you waste less time with extra training and have more time for battling.

Reducing EV's:
Should you screw up while EV training, fear not, as there are ways to correct your errors! There are six different berries that can remove EV's, one for each stat. These Berries function much like the Vitamins as they remove 10 EV's upon use. Also, if your Pokemon has more than 100 EV's in the stat you want to lower, when you use the corresponding berry, it will first lower the EV's to 100, then by 10 each use after, this way it only takes a maximum of 11 berries to reduce a stat to zero EV's.

Here is my Swampert before a Pomeg Berry, during the use of a Pomeg Berry, and after the use of a Pomeg berry. Swampert had over 100 HP EV's, 240 to be exact, so this was a jump from 240 to 100 EV's so the stat jump was rather large.
